Mayo Parmesan Chicken
Ingredients:
4 boneless, skinless chicken breasts
1/2 cup mayonnaise (or Greek yogurt for a lighter option)
1/2 cup grated Parmesan cheese
1/2 cup breadcrumbs (Panko or regular)
1 tsp garlic powder
1 tsp onion powder
1 tsp Italian seasoning
1/2 tsp paprika (optional)
Salt and pepper to taste
Fresh parsley, chopped (optional, for garnish)
Directions:
Preheat the Oven:
Preheat your oven to 375°F (190°C). Lightly grease a baking dish with non-stick spray or olive oil.
Prepare the Chicken:
Pat the chicken breasts dry with a paper towel and season both sides with salt, pepper, garlic powder, onion powder, and Italian seasoning.
Make the Parmesan Mixture:
In a small bowl, combine mayonnaise (or Greek yogurt) and Parmesan cheese until well mixed.
Coat the Chicken:
Spread the mayo-Parmesan mixture evenly on top of each chicken breast, covering them completely.
Add the Breadcrumb Topping:
Sprinkle breadcrumbs on top of the mayo-Parmesan-coated chicken, pressing gently so the crumbs adhere.
Bake the Chicken:
Place the chicken breasts in the prepared baking dish and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the top is golden brown and crispy.
Serve:
Remove from the oven and let the chicken rest for 5 minutes. Garnish with fresh parsley, if desired.
