Cabbage Roll Soup
Ingredients:
1 lb ground beef (or turkey)
1 medium onion (chopped)
2 cloves garlic (minced)
1 can (15 oz) tomato sauce
1 can (14.5 oz) diced tomatoes (with juice)
4 cups beef broth (or chicken broth)
1 medium head of cabbage (chopped)
1 cup uncooked rice (white or brown)
1 tbsp Worcestershire sauce
1 tbsp Italian seasoning
1 tsp paprika
Salt and pepper (to taste)
Fresh parsley (for garnish, optional)
Instructions:
Cook the meat:
In a large pot or Dutch oven, brown the ground beef over medium heat. Break it apart as it cooks. Once browned, drain any excess fat.
Add onion and garlic:
Add the chopped onion to the pot and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.
Combine the ingredients:
Add the tomato sauce, diced tomatoes, beef broth, chopped cabbage, uncooked rice, Worcestershire sauce, Italian seasoning, paprika, salt, and pepper to the pot. Stir until well combined.
Simmer the soup:
Bring the soup to a boil, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes, or until the cabbage and rice are tender. Stir occasionally.
Adjust seasoning:
Taste the soup and adjust the seasoning if necessary.
Serve:
Ladle the soup into bowls and garnish with fresh parsley if desired. Serve hot with crusty bread or crackers.
