Homemade Reese’s Eggs
Ingredients:
1 1/2 cups creamy peanut butter
1/4 cup unsalted butter, softened
1 cup powdered sugar
1/2 teaspoon vanilla extract
2 cups milk chocolate chips (or semi-sweet chocolate chips)
1 tablespoon coconut oil (or shortening, for melting the chocolate)
Pinch of salt (optional)
Directions:
Prepare the Peanut Butter Filling:
In a large bowl, combine the peanut butter, softened butter, powdered sugar, vanilla extract, and a pinch of salt (optional). Mix until the filling is smooth and well-combined.
Once the mixture is fully combined, place it in the refrigerator for 20-30 minutes to firm up slightly, making it easier to shape.
Shape the Peanut Butter Eggs:
Line a baking sheet with parchment paper. After the filling has chilled, take small portions (about 1-2 tablespoons) of the peanut butter mixture and shape them into egg-like ovals by rolling them in your hands. Place each peanut butter egg onto the prepared baking sheet. Continue until all the filling is shaped.
Place the peanut butter eggs back in the refrigerator for 30 minutes to firm up.
Melt the Chocolate:
In a microwave-safe bowl, combine the chocolate chips and coconut oil (or shortening). Microwave in 30-second intervals, stirring in between each interval, until the chocolate is fully melted and smooth.
Allow the melted chocolate to cool slightly for easier coating.
Dip the Eggs in Chocolate:
Remove the peanut butter eggs from the fridge. Using a fork or dipping tool, dip each egg into the melted chocolate, ensuring it is fully coated. Gently tap off the excess chocolate and place the coated eggs back on the parchment paper-lined baking sheet.
Repeat the process until all the eggs are coated in chocolate.
Set the Chocolate:
Place the chocolate-coated eggs back in the refrigerator for 15-20 minutes, or until the chocolate is fully set and hardened.
Decorate (Optional):
If desired, drizzle additional melted chocolate or sprinkle with toppings like chopped peanuts, sprinkles, or sea salt for added texture and flavor.
Serve:
Once the chocolate has set, the Homemade Reese’s Eggs are ready to enjoy! Store them in an airtight container in the refrigerator to keep them fresh.
