Cream Cheese and Bacon Stuffed Doritos Chicken

Ingredients:
4 boneless, skinless chicken breasts
1 package (8 oz) cream cheese, softened
1 cup shredded cheddar cheese
6 slices of bacon, cooked and crumbled
2 cups crushed Nacho Cheese Doritos
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and pepper, to taste
2 large eggs, beaten
1 tablespoon olive oil

Directions:
Prepare the Filling:
In a medium bowl, combine softened cream cheese, shredded cheddar cheese, cooked crumbled bacon, garlic powder, onion powder, paprika, salt, and pepper. Mix until well blended.
Stuff the Chicken:
Slice a pocket into each chicken breast (lengthwise) without cutting all the way through.
Stuff each chicken breast with the cream cheese and bacon mixture, securing with toothpicks if necessary to keep the filling inside.
Coat the Chicken:
Crush the Doritos in a zip-lock bag or food processor until they resemble coarse crumbs.
Set up a breading station by placing the beaten eggs in one bowl and the crushed Doritos in another.
Dip each stuffed chicken breast into the egg mixture, ensuring it’s fully coated. Then, press the chicken into the crushed Doritos, making sure it’s evenly covered on all sides.
Cook the Chicken:
Preheat the oven to 375°F (190°C).
Heat olive oil in an oven-safe skillet over medium heat.
Sear the chicken breasts for 2-3 minutes on each side until golden brown.
Bake:
Transfer the skillet with the chicken into the preheated oven and bake for 20-25 minutes, or until the chicken is fully cooked through (internal temperature should reach 165°F/74°C).
Serve:
Let the chicken rest for a few minutes before serving.
Garnish with extra crumbled bacon or a drizzle of ranch dressing, if desired.
