Philly Cheesesteak Meatloaf

Ingredients:
1 1/2 lbs ground beef
1 small onion (chopped)
1 green bell pepper (chopped)
1 cup mushrooms (chopped, optional)
1 cup provolone cheese (shredded)
2 large eggs
1/2 cup breadcrumbs
1/4 cup milk
1 tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
4 slices provolone cheese (for topping)
2 tbsp olive oil (for sautéing)

Instructions:
Preheat the oven:
Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
Sauté the vegetables:
Heat the olive oil in a skillet over medium heat. Sauté the onions, bell peppers, and mushrooms until softened, about 5 minutes. Remove from heat and let cool slightly.
Make the meatloaf mixture:
In a large bowl, combine the ground beef, eggs, breadcrumbs, milk, Worcestershire sauce, garlic powder, salt, and black pepper. Add the sautéed vegetables and shredded provolone cheese. Mix everything together until well combined.
Shape the meatloaf:
Transfer the mixture to the prepared loaf pan and press it down evenly.
Bake the meatloaf:
Bake in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (70°C).
Add the cheese topping:
In the last 5 minutes of baking, remove the meatloaf from the oven and place the provolone cheese slices on top. Return to the oven until the cheese is melted and bubbly.
Serve:
Let the meatloaf rest for 10 minutes before slicing. Serve with your favorite sides like mashed potatoes or a fresh salad.
