Apple Cranberry Coleslaw

Ingredients:
4 cups green cabbage (shredded)
1 cup red cabbage (shredded, optional for color)
1 large apple (thinly sliced or julienned)
1/2 cup dried cranberries
1/4 cup green onions (sliced)
1/4 cup toasted pecans or walnuts (optional for crunch)
For the Dressing:
1/2 cup mayonnaise
2 tbsp apple cider vinegar
1 tbsp honey or maple syrup
1 tsp Dijon mustard
Salt and pepper (to taste)

Instructions:
Prepare the vegetables:
In a large bowl, combine the shredded cabbage, sliced apple, dried cranberries, and green onions. If using, add toasted pecans or walnuts for extra crunch.
Make the dressing:
In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey or maple syrup, Dijon mustard, salt, and pepper until smooth.
Toss the coleslaw:
Pour the dressing over the cabbage mixture and toss everything together until well coated.
Chill and serve:
Cover the coleslaw and refrigerate for at least 30 minutes before serving to let the flavors meld together.
