Low Carb Unstuffed Cabbage Casserole

Ingredients:
1 lb ground beef (or ground turkey, chicken, or pork)
1 small onion, diced
3 cloves garlic, minced
1 small head of cabbage, chopped (about 6-8 cups)
1 can (14.5 oz) diced tomatoes (no added sugar)
1 can (8 oz) tomato sauce (no added sugar)
1 tsp paprika
1 tsp dried oregano
1 tsp dried basil
1/2 tsp ground cumin
Salt and pepper to taste
1 1/2 cups shredded mozzarella cheese (optional for topping)
1 tbsp olive oil (for cooking)

Directions:
Cook the Beef and Onions:
Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
Add the ground beef and garlic. Cook until the beef is browned and fully cooked, breaking it up into crumbles as it cooks. Drain excess fat if necessary.
Add Cabbage and Tomatoes:
Add the chopped cabbage to the skillet, stirring to combine with the beef mixture.
Pour in the diced tomatoes and tomato sauce. Stir well, then add the paprika, oregano, basil, cumin, salt, and pepper.
Cover the skillet and cook for about 10-15 minutes, stirring occasionally, until the cabbage is tender and has absorbed the flavors.
Transfer to Casserole Dish:
Preheat your oven to 350°F (175°C).
Transfer the cabbage and beef mixture to a greased casserole dish. If using cheese, sprinkle the shredded mozzarella evenly over the top.
Bake:
Bake uncovered for 20 minutes, or until the cheese is melted and bubbly (if using).
For a crispy cheese topping, turn on the broiler for the last 2-3 minutes of cooking.
Serve:
Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh parsley or a dollop of sour cream if desired.
