π₯ Deconstructed Reuben Casserole
A warm and cheesy casserole version of the classic Reuben sandwich β perfect for feeding a crowd or easy weeknight comfort.
π Ingredients:
1 lb corned beef, thinly sliced (or chopped)
2 cups sauerkraut, well drained
8 slices rye bread, cubed
2 cups Swiss cheese, shredded
1 cup Thousand Island dressing
ΒΌ cup butter, melted
π©βπ³ Instructions:
Preheat the Oven
Preheat your oven to 350Β°F (175Β°C). Lightly grease a 9×13″ baking dish.
Prepare the Bread Layer
Place cubed rye bread in a bowl and drizzle with melted butter. Toss to coat, then layer half in the bottom of the dish.
Add the Layers
Layer corned beef evenly over the bread. Spread sauerkraut on top. Drizzle with Thousand Island dressing.
Top It Off
Sprinkle shredded Swiss cheese generously over the entire mixture. Add remaining rye bread cubes on top.
Bake to Perfection
Bake uncovered for 25β30 minutes, or until cheese is melted and bubbly, and the top is golden brown.
π Optional Add-Ins:
Add a few dill pickle slices for tang
Sprinkle with caraway seeds for extra rye flavor
Swap out Thousand Island with Russian dressing for a bolder kick
