For the Meatloaf Base:
1.5 lb ground beef

1 small onion, finely chopped

2 garlic cloves, minced

Β½ cup breadcrumbs

ΒΌ cup milk

1 egg

1 tbsp Worcestershire sauce

1 tsp salt

Β½ tsp black pepper

For the Mashed Potato Layer:
3 cups mashed potatoes (prepared ahead of time or made fresh)

2 tbsp butter

ΒΌ cup sour cream or cream cheese

Salt and pepper to taste

Toppings:
1 cup shredded cheddar cheese

Β½ cup cooked and crumbled bacon

2 tbsp chopped green onions (optional)

Preheat the oven to 375Β°F (190Β°C). Grease a 9×9″ or similar-sized baking dish.

Make the meatloaf layer: In a large bowl, mix the ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire, salt, and pepper until combined. Press the mixture evenly into the bottom of the baking dish.

Bake the meat base for 20–25 minutes, until the meat is mostly cooked through. Drain any excess fat if needed.

Top with potatoes: Spread the mashed potatoes evenly over the cooked meatloaf. Smooth the surface.

Add toppings: Sprinkle cheddar cheese and bacon over the top.

Return to oven and bake for another 15 minutes, or until cheese is bubbly and golden.

Garnish and serve: Top with green onions and serve warm!
