Tzatziki Chicken Salad 🥒🍗

🧂 Ingredients:
3 cups cooked and shredded chicken
½ cup thinly sliced red onion
1 English cucumber, shredded
1 cup plain Greek yogurt
3 tablespoons fresh dill, chopped
1 tablespoon lemon juice
1-2 cloves garlic, minced
Salt and pepper, to taste

Prepare the vegetables: Start by shredding the cucumber and chopping the red onion. Place the shredded cucumber in a clean kitchen towel or paper towel and gently squeeze out the excess water to avoid sogginess in the salad.
Mix the salad: In a large bowl, combine the cooked, shredded chicken, sliced red onion, and the squeezed cucumber.
Make the tzatziki dressing: In a separate bowl, mix together the plain Greek yogurt, fresh dill, minced garlic, lemon juice, and salt and pepper to taste. Stir until well combined.
Combine: Pour the tzatziki dressing over the chicken mixture and stir until everything is evenly coated.
Chill and serve: Chill the chicken salad in the refrigerator for about 30 minutes before serving. This will allow the flavors to meld together.
