🍒💚 Heavenly Cherry Pistachio Cream Bars
These delightful bars combine the crunch of pistachios with the sweetness of cherries and the smoothness of cream cheese for a treat that’s out of this world!
Ingredients:
For the Crust:
1 cup all-purpose flour
1/2 cup unsalted butter, chilled and diced
1/4 cup powdered sugar
1/2 cup chopped pistachios
For the Cream Cheese Layer:

Instructions:
Prepare the crust:
Preheat the oven to 350°F (175°C). In a mixing bowl, combine the flour, powdered sugar, and chopped pistachios. Add the cold, diced butter and mix with a pastry cutter or fork until the mixture forms crumbs and starts to come together. Press this mixture evenly into the bottom of a greased 9×9-inch baking pan to form the crust.
Bake the crust:
Bake in the preheated oven for 12-15 minutes, or until the crust is lightly golden. Remove from the oven and set aside to cool slightly.
Make the cream cheese layer:
In a separate bowl, beat the cream cheese until smooth and creamy. Add powdered sugar and vanilla extract, and mix until well combined. Once the crust has cooled slightly, spread the cream cheese mixture evenly over the crust.
Add the cherry topping (or any additional layers):
You can add a layer of fresh cherries or a cherry topping of your choice on top of the cream cheese layer. This could be cherry pie filling, fresh cherries, or a mixture of both.
Chill:
Refrigerate the bars for at least 2 hours or until the cream cheese layer is set.
Serve:
Once chilled, cut into squares and serve chilled for the best texture and flavor.
Tips:
For an extra pop of flavor, drizzle with chocolate ganache or top with a sprinkle of chopped pistachios just before serving.
These bars can be stored in the fridge for up to 3 days!
