Ingredients:
1 cup pitted Medjool dates
1/2 cup walnuts
1/2 cup oats
1 tablespoon chia seeds
1 tablespoon flaxseeds
1 tablespoon maple syrup
Instructions:
Prepare the dates:
In a food processor, pulse the pitted dates until they form a sticky paste. You may need to scrape down the sides once or twice.
Process the nuts and seeds:
Add the walnuts, oats, chia seeds, and flaxseeds to the food processor. Pulse until everything is finely chopped but still has some texture.
Add the maple syrup:
Add the maple syrup and pulse again until everything is well combined and the mixture starts to come together.
Press the mixture into a pan:
Line a small baking dish (about 8×8 inches) with parchment paper. Press the mixture firmly into the dish, spreading it out evenly.
Chill:
Place the pan in the refrigerator for about 1 hour to set.
Cut into bars:
Once chilled, remove from the fridge and cut into bars or squares. Store in an airtight container in the fridge for up to a week.

You can substitute the walnuts for any nut of your choice, such as almonds or pecans.
