Shrimp Egg Rolls 🥡
Crunchy, savory, and packed with shrimp and veggies — better than takeout!
Ingredients:
1 pound cooked shrimp, chopped (peeled and deveined)
1/2 cup shredded cabbage
1/4 cup shredded carrots
1/4 cup bean sprouts
1 green onion, thinly sliced
1 clove garlic, minced
1 tablespoon soy sauce
1 teaspoon sesame oil (optional, for extra flavor)
8–10 egg roll wrappers
Water (for sealing edges)
Oil for frying
Instructions:
Prepare the filling:
In a large bowl, combine chopped shrimp, cabbage, carrots, bean sprouts, green onion, garlic, soy sauce, and sesame oil (if using). Toss everything together until well mixed.
Assemble the egg rolls:
Lay an egg roll wrapper on a clean surface in a diamond shape. Spoon about 2 tablespoons of filling in the center. Fold the bottom point up over the filling, then fold in the sides, and roll tightly. Seal the top edge with water.
Cook:
Fry: Heat about 2 inches of oil in a deep pan to 350°F (175°C). Fry egg rolls 2–3 at a time until golden brown and crispy, about 3–4 minutes.
Air fry: Lightly brush or spray with oil and air fry at 390°F (200°C) for 8–10 minutes, flipping halfway.
Bake: Brush with oil and bake at 400°F (200°C) for 15–18 minutes, flipping once.
Serve:
Drain on paper towels. Serve hot with sweet chili sauce, soy sauce, or spicy mayo for dipping!

Add a little fresh grated ginger for a flavor boost.
Want it spicy? Toss in a pinch of crushed red pepper.
Make ahead and freeze before cooking — fry straight from frozen!
