Slice onions:
Cut onions into thick rings and separate them. Choose pairs of rings (one smaller inside the other) to create space for stuffing.
Stuff with cheese:
Cut mozzarella into strips and place between two onion rings (small ring inside large). Press gently to sandwich the cheese.
Freeze:
Place the stuffed rings on a tray and freeze for 1 hourβthis helps them hold shape while frying.
Coat the rings:
Dredge each ring in flour, dip in beaten egg, coat in breadcrumbs, then repeat the egg and breadcrumb steps again for an extra crispy coating.
Fry ’em up:
