No stale tin cookies here—these melt-in-your-mouth butter cookies are soft, buttery, and golden with just the right amount of sweetness. Perfect with tea, coffee, or dipped in chocolate!
🧾 Ingredients:
1 cup (2 sticks / 227 g) unsalted butter, room temperature 🧈
⅔ cup (133 g) granulated sugar 🍚
2 large egg yolks, room temperature 🥚
1 teaspoon vanilla extract 🍦
¼ teaspoon salt 🧂
2 cups (250 g) all-purpose flour 🌾
Optional: extra sugar for sprinkling or chocolate for dipping 🍫
👩🍳 Instructions:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Cream butter and sugar:
In a large bowl, beat butter and sugar together until light and fluffy (about 2–3 minutes).
Add egg yolks & vanilla:
Mix in the egg yolks one at a time, then stir in vanilla extract.
Add dry ingredients:
Add salt and gradually mix in the flour until a soft dough forms. Don’t overmix!
Shape cookies:
Scoop dough by the tablespoon, roll into balls, and slightly flatten with your palm or the bottom of a glass.
Optional: Sprinkle with sugar or use a fork for a pattern.
Bake:
Bake 12–14 minutes, or until edges are just golden. Let cool on the sheet for 5 minutes before transferring to a rack.
