🍀 St. Patrick’s Day Corned Beef and Cabbage Sliders 🥪
Celebrate with these delicious mini sandwiches packed with savory corned beef, tangy cabbage slaw, and melty Swiss cheese. Perfect for parties or a fun family dinner!
🛒 Ingredients:
12 slider buns
1 lb corned beef, thinly sliced
1 cup cabbage, finely shredded
2 tbsp Dijon mustard
¼ cup mayonnaise
2 tbsp apple cider vinegar
1 tbsp sugar
Salt & pepper, to taste
6 slices Swiss cheese, quartered (for 12 small pieces)

Make the Slaw 🥬
In a bowl, mix shredded cabbage, mayo, Dijon mustard, apple cider vinegar, sugar, salt, and pepper. Chill for at least 10 minutes to let flavors blend.
Warm the Corned Beef 🔥
Heat the sliced corned beef briefly in a skillet or microwave until warm, but not dried out.
Assemble the Sliders 🍔
Slice slider buns in half. Place a layer of corned beef on the bottom half, add a piece of Swiss cheese, a spoonful of cabbage slaw, then top with the bun.
Optional Toasting 🔥
For melty cheese and toasty buns, place assembled sliders in a baking dish. Brush tops with melted butter and bake at 350°F (175°C) for 10–12 minutes.
