Oven-Fried Stuffed Potatoes π½οΈπ₯
These Oven-Fried Stuffed Potatoes are a perfect balance of crispy outside and creamy, cheesy, bacon-filled goodness on the inside. Easy to make and perfect as a side dish or a hearty snack!
Ingredients:
4 large russet potatoes π₯
2 tbsp olive oil π«
1/2 cup sour cream πΆ
1/2 cup shredded cheddar cheese π§
1/4 cup cooked bacon, crumbled π₯
2 green onions, chopped π±
Salt and pepper to taste π§
1/4 tsp paprika (optional) πΆοΈ
Instructions:
1. Preheat the Oven:
Preheat your oven to 400Β°F (200Β°C).
2. Prep the Potatoes:
Wash and scrub the russet potatoes thoroughly. Pat them dry with a paper towel.
Pierce each potato a few times with a fork to prevent them from bursting while baking.
Rub the potatoes with olive oil and season with salt and pepper. Place them directly on the oven rack or on a baking sheet.
3. Bake the Potatoes:
Bake the potatoes in the preheated oven for 45-60 minutes, or until tender when pierced with a fork. Once done, remove them from the oven and let them cool for a few minutes until theyβre cool enough to handle.
4. Prepare the Potato Filling:
Once the potatoes are cool enough to touch, slice them in half lengthwise. Scoop out the insides, leaving about 1/4 inch of potato along the skin. Place the scooped-out potato flesh in a large mixing bowl.
Add the sour cream, shredded cheddar cheese, crumbled bacon, chopped green onions, and a pinch of salt and pepper. Mash everything together until smooth and well combined.
5. Stuff the Potatoes:
Spoon the mashed potato mixture back into the potato skins, filling them generously. Optionally, sprinkle a little more cheddar cheese on top for extra cheesy goodness.
6. Bake Again:
Place the stuffed potatoes back on the baking sheet. Optionally, sprinkle paprika on top for added flavor and color.
Bake for another 15-20 minutes or until the cheese is melted and the tops are golden and slightly crispy.
7. Serve:
Remove from the oven and allow the potatoes to cool for a couple of minutes. Serve warm as a side dish or a satisfying snack!
