Ingredients:
For the Crust & Crumb Topping:
2 ½ cups all-purpose flour 🌾
1 cup granulated sugar 🍚
1 teaspoon baking powder 🍞
½ teaspoon salt 🧂
1 cup unsalted butter, cold and cubed 🧈
1 large egg 🥚
1 teaspoon vanilla extract 🍦
For the Lemon Filling:
4 large eggs 🥚
1 ½ cups granulated sugar 🍚
2 tablespoons all-purpose flour 🌾
1/2 teaspoon baking powder 🍞
1/4 teaspoon salt 🧂
1/2 cup freshly squeezed lemon juice 🍋
1 teaspoon lemon zest 🍋
Instructions:
1. Make the Crust:
Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch baking dish with parchment paper.
In a large bowl, combine the flour, sugar, baking powder, and salt.
Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
Stir in the egg and vanilla extract until combined.
Press the mixture into the bottom of the prepared baking dish to form the crust.
2. Prepare the Lemon Filling:
In a separate bowl, whisk together the eggs, sugar, flour, baking powder, salt, lemon juice, and lemon zest until smooth.
Pour the lemon filling over the prepared crust.
3. Add the Crumb Topping:
