Butter Pecan Cookies 🍪🌰

Ingredients:
1 cup unsalted butter, melted and cooled slightly 🧈
1/2 cup granulated sugar 🍬
1 cup brown sugar (packed) 🍂
2 large eggs 🥚
1.5 tsp vanilla extract 🍦
2.5 cups all-purpose flour 🌾
1 tsp cinnamon powder 🌟
1 tsp cornstarch 🌽
1 tsp baking soda 🧁
1/2 tsp baking powder 🧁
1.5 cups roughly chopped pecans, toasted if preferred 🌰
1/2 cup toffee bits (optional) 🍬
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
Prepare the Wet Ingredients:
In a large bowl, cream together the melted butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs, one at a time, mixing well after each addition.
Stir in the vanilla extract.
Mix the Dry Ingredients:
In a separate bowl, whisk together the flour, cinnamon powder, cornstarch, baking soda, and baking powder.
Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix the dough.
Add the Pecans and Toffee (Optional):
Gently fold in the chopped pecans and toffee bits (if using).
Scoop and Bake:
Using a cookie scoop or tablespoon, scoop the dough and roll it into balls. Place the dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
Gently flatten each dough ball with the back of a spoon.
Bake the Cookies:
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are just set. Keep a close eye on them to avoid overbaking.
