Ingredients:

1 cup cold sparkling water ๐ง

Instructions:
Prepare the Batter:
In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, and pepper.
Gradually pour in the cold sparkling water, whisking until smooth and combined. The batter should be slightly thick but able to coat the back of a spoon.
Prepare the Fish:
Pat the fish fillets dry with paper towels to remove any excess moisture. This helps the batter stick better.
