🥘 Classic Homemade Beef Stew

2 pounds beef stew meat, cut into chunks

2 tablespoons olive oil

1 onion, chopped

3 garlic cloves, minced

4 cups beef broth

3 carrots, sliced

3 potatoes, diced

1 cup baby potatoes (optional)

2 tablespoons tomato paste

1 teaspoon dried thyme

1 teaspoon paprika

Salt and black pepper to taste

2 tablespoons flour or cornstarch (to thicken)

👩🍳 Instructions
1️⃣ Brown the beef
Heat olive oil in a large pot over medium-high heat.
Add the beef chunks and brown them on all sides for about 5–7 minutes.
2️⃣ Add aromatics
Stir in the onion and garlic and cook for about 2 minutes until fragrant.
3️⃣ Build the flavor
Add tomato paste, paprika, thyme, salt, and pepper. Stir well to coat the beef.
4️⃣ Add broth and simmer
Pour in the beef broth, bring to a boil, then reduce heat to low.
Cover and simmer for 45 minutes.
