Ingredients

12 oz spaghetti

1 lb ground beef

1 packet taco seasoning (or 2 tbsp homemade blend)

1 can Rotel tomatoes (diced tomatoes with green chilies, undrained)

2 cups beef broth

1 cup tomato sauce
-
1 tbsp olive oil (optional)

1 cup shredded cheddar cheese (optional but recommended 😏)

Salt & black pepper, to taste
Optional Toppings:
Chopped cilantro, green onions, sour cream, jalapeños, extra cheese
Directions

Cook the Beef
Heat a large deep skillet or pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed. -
Season
Stir in taco seasoning and cook for 1 minute to bloom the spices. -
Build the Sauce
Add Rotel tomatoes, beef broth, and tomato sauce. Stir to combine. -
Add Spaghetti
Break spaghetti in half and submerge it into the sauce. Bring to a gentle boil. -
Simmer
Reduce heat to medium-low, cover, and simmer 12–15 minutes, stirring occasionally, until pasta is tender and sauce thickens. -
Cheesy Finish (Optional)
Stir in shredded cheese until melted and creamy. -
Serve
Spoon into bowls and add your favorite toppings.
