Directions
1. Boil the Potatoes
Place peeled and chopped potatoes in a large pot. Cover with cold water and add a pinch of salt. Bring to a boil, then simmer 15–20 minutes until potatoes are fork-tender.
2. Heat the Cream & Butter
In a small saucepan, warm heavy cream and butter over low heat until butter melts and mixture is hot.
3. Mash the Potatoes
Drain potatoes well and return to the pot. Mash using a potato masher, ricer, or food mill until smooth.
4. Incorporate Cream & Butter
Gradually stir in warm cream and butter mixture until fully incorporated. Adjust consistency with extra cream if desired.
5. Season & Serve
Season with salt to taste. Transfer to a serving bowl and garnish with chopped chives or parsley, if desired. Serve hot.
