Ingredients

Chocolate Mousse:

  • 6 oz semi-sweet chocolate, finely chopped

  • 2 Tbsp butter

  • 3 large eggs, separated

  • ¼ cup granulated sugar

  • 1 tsp vanilla extract

  • Pinch of salt

Whipped Cream Clouds:

  • 1 cup heavy whipping cream

  • 2 Tbsp powdered sugar

  • ½ tsp vanilla extract

Optional Garnish:

  • Chocolate curls or shavings

  • Cocoa powder dusting


Directions

  1. Melt Chocolate & Butter
    In a heatproof bowl over gently simmering water (double boiler), melt chocolate and butter together, stirring until smooth. Remove from heat and let cool slightly.

  2. Incorporate Egg Yolks
    Whisk egg yolks into the melted chocolate one at a time until fully combined. Stir in vanilla extract and a pinch of salt.

  3. Beat Egg Whites
    In a clean bowl, beat egg whites until soft peaks form. Gradually add granulated sugar and continue beating until glossy stiff peaks form.

  4. Fold in Egg Whites
