Ingredients
Chocolate Mousse:

6 oz semi-sweet chocolate, finely chopped

2 Tbsp butter

3 large eggs, separated

¼ cup granulated sugar

1 tsp vanilla extract

Pinch of salt
Whipped Cream Clouds:

1 cup heavy whipping cream

2 Tbsp powdered sugar

½ tsp vanilla extract
Optional Garnish:

Chocolate curls or shavings

Cocoa powder dusting
Directions

Melt Chocolate & Butter
In a heatproof bowl over gently simmering water (double boiler), melt chocolate and butter together, stirring until smooth. Remove from heat and let cool slightly. -
Incorporate Egg Yolks
Whisk egg yolks into the melted chocolate one at a time until fully combined. Stir in vanilla extract and a pinch of salt. -
Beat Egg Whites
In a clean bowl, beat egg whites until soft peaks form. Gradually add granulated sugar and continue beating until glossy stiff peaks form. -
Fold in Egg Whites
Gently fold the egg whites into the chocolate mixture in batches. Use a spatula and fold carefully to preserve airiness. -
Chill Mousse
Spoon the mousse into serving glasses or bowls. Refrigerate for at least 1 hour, until set. -
Make Whipped Cream Clouds
Beat heavy cream with powdered sugar and vanilla until soft, cloud-like peaks form. -
Assemble & Serve
