Ruth’s Chris Spinach Rockefeller Dip
Description
This Spinach Rockefeller Dip is rich, warm, and ultra-creamy, inspired by the iconic steakhouse favorite. Loaded with spinach, cheese, and a hint of garlic, it’s perfect for parties, game day, or any time you want a dangerously addictive appetizer.
Ingredients

1 Tbsp butter

1 Tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced
-
1 cup chopped spinach (fresh or thawed frozen, squeezed dry)

½ cup artichoke hearts, chopped (optional)

½ cup cream cheese, softened
-
½ cup sour cream
-
½ cup mayonnaise
-
½ cup grated Parmesan cheese
-
½ cup shredded mozzarella cheese

Salt and black pepper, to taste

½ tsp red pepper flakes (optional, for heat)

¼ tsp nutmeg (optional, for extra depth)
Optional Garnish:

Extra Parmesan or mozzarella cheese

Chopped parsley

Toasted baguette slices or crackers for serving
Directions

Preheat Oven
Preheat oven to 375°F (190°C). Grease a small baking dish or oven-safe skillet. -
Sauté Aromatics
In a skillet over medium heat, melt butter with olive oil. Add onion and cook until softened, about 3–4 minutes. Add garlic and cook 30 seconds until fragrant. -
Add Spinach & Artichokes
Stir in chopped spinach and artichoke hearts (if using). Cook until spinach is wilted and excess moisture is evaporated. -
Mix in Creamy Ingredients
Remove from heat and stir in cream cheese, sour cream, mayonnaise, Parmesan, mozzarella, salt, pepper, red pepper flakes, and nutmeg until smooth and well combined. -
Bake the Dip
Transfer mixture to prepared baking dish. Sprinkle extra cheese on top if desired. Bake 15–20 minutes until hot and bubbly, and the top is lightly golden. -
Serve
Serve warm with toasted baguette slices, crackers, or fresh vegetables for dipping.
