Ingredients

  • 1 refrigerated pie crust

  • 1 Tbsp olive oil

  • 1 small onion, finely chopped

  • 2 cups fresh spinach (or 1 cup frozen, thawed and drained)

  • 4 large eggs

  • 1 cup milk or half-and-half

  • 1 cup shredded cheese (cheddar, Swiss, or mozzarella)

  • ½ tsp salt

  • ¼ tsp black pepper

  • ¼ tsp nutmeg (optional)

Optional Add-Ins

  • Cooked bacon or ham

  • Mushrooms, diced

  • Red bell pepper, diced


Directions

  1. Preheat Oven
    Preheat oven to 375°F (190°C). Place the pie crust in a 9-inch pie pan and set aside.

  2. Cook the Vegetables
    Heat olive oil in a skillet over medium heat. Sauté chopped onion until soft and translucent (about 3–4 minutes). Add spinach and cook until wilted. Remove from heat and let cool slightly.

  3. Prepare the Egg Mixture
    In a bowl, whisk together eggs, milk, salt, black pepper, and nutmeg.

  4. Assemble the Quiche
    Spread the cooked onions and spinach evenly in the pie crust. Sprinkle shredded cheese on top. Pour the egg mixture over the filling.

  5. Bake
    Bake for 35–40 minutes, or until the center is set and the top is lightly golden. If the edges brown too quickly, cover with foil.

  6. Cool & Serve
    Let quiche cool for 5–10 minutes before slicing. Serve warm or at room temperature.
