Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

  • 2 Tbsp olive oil

  • 4 Tbsp unsalted butter

  • 4 cloves garlic, minced

  • 2 Tbsp all-purpose flour

  • 2 cups heavy cream

  • 1 cup freshly grated Parmesan cheese

  • ½ tsp Italian seasoning

  • ½ tsp salt (or to taste)

  • ½ tsp black pepper

  • 12 oz pasta (penne, fettuccine, or rotini)

  • ¼ cup pasta cooking water (as needed)

Optional Garnish

  • Chopped parsley

  • Extra Parmesan

  • Red pepper flakes


Directions

  1. Cook the Pasta
    Bring a large pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve ¼ cup pasta water, then drain.

  2. Cook the Chicken
    Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook for 5–7 minutes until golden and cooked through. Remove and set aside.

  3. Make the Sauce
    In the same skillet, melt butter. Add garlic and sauté for 30 seconds until fragrant. Whisk in flour and cook for 1 minute.

  4. Add Cream & Cheese
    Slowly whisk in heavy cream. Simmer for 2–3 minutes until slightly thickened. Stir in Parmesan cheese and Italian seasoning until smooth.

  5. Combine Everything
    Add cooked chicken and pasta to the sauce. Toss to coat, adding reserved pasta water if needed to loosen the sauce.

  6. Serve
    Garnish with parsley, extra Parmesan, and red pepper flakes if desired. Serve warm.
