š©āš³ Directions
1. Preheat the oven
Preheat your oven to 375°F (190°C). Line a baking sheet with foil or parchment for easy cleanup.
2. Prepare the jalapeƱo popper filling
In a bowl, mix the cream cheese, cheddar cheese, crumbled bacon, and diced jalapeƱo. Mash until creamy and well blended. Set aside.
3. Mix the meatloaf base
In a large bowl, combine the ground beef, ground pork/sausage, breadcrumbs, eggs, onion, diced jalapeƱos, Worcestershire, smoked paprika, garlic powder, onion powder, salt, and pepper.
Mix gently with your hands until everything is evenly combined ā donāt overmix, or the meatloaf may turn dense.
4. Shape and fill the meatloaf
On the prepared baking sheet, shape half the meat mixture into a long, thick loaf. Press a trench into the center.
Spoon the jalapeƱo popper filling into the trench.
Cover with the remaining meat mixture, sealing the sides completely so the cheese stays inside during baking.
5. Add the BBQ topping
Spread a layer of BBQ sauce over the top of the loaf.
If you want extra cheesiness, sprinkle shredded cheddar on top.
6. Bake the meatloaf
Bake for 55ā65 minutes, or until the internal temperature reaches 160°F (71°C).
Let it rest for 10 minutes so the juices redistribute and the filling sets.
7. Finish with ranch drizzle
Stir together the ranch dressing and milk until smooth.
Drizzle over the sliced meatloaf or serve on the side for dipping.
