🛒 Ingredients
For the Potatoes:
-
3 large russet potatoes, peeled and cubed
-
2 tbsp olive oil
-
1 tsp smoked paprika
-
1/2 tsp garlic powder
-
1/2 tsp salt
-
1/4 tsp black pepper
For the Beef:
-
1 lb ground beef
-
1 small onion, finely chopped
-
2 cloves garlic, minced
-
1 tsp chili powder
-
1/2 tsp cumin
-
1/2 tsp smoked paprika
-
Salt and pepper to taste
For the Burritos:
-
6 large flour tortillas
-
2 cups shredded cheddar or Mexican cheese blend
-
1/2 cup nacho cheese sauce (store-bought or homemade)
-
1/4 cup chopped fresh cilantro (optional)
-
Sour cream and salsa for serving
Directions
1. Cook the potatoes
Toss the cubed potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper. Air-fry at 400°F (200°C) for 15–20 minutes, shaking halfway through, until golden and crispy. If you don’t have an air fryer, roast in the oven at 425°F (220°C) for 25–30 minutes, tossing halfway.
2. Cook the beef
In a skillet over medium heat, cook the ground beef with chopped onion and minced garlic. Add chili powder, cumin, smoked paprika, salt, and pepper. Cook until the beef is browned and onions are soft, about 8–10 minutes. Drain excess grease if needed.
3. Combine beef and potatoes
Add the crispy potatoes to the beef mixture and gently toss until evenly combined. This will give each bite the perfect mix of soft, crispy, and savory goodness.
4. Assemble the burritos
Lay out a tortilla and spoon a generous portion of the beef-potato mixture in the center. Sprinkle with shredded cheese and a drizzle of nacho cheese sauce. Fold the sides in, then roll tightly from the bottom to form a burrito. Repeat for all tortillas.
5. Skillet-toasting the burritos
Heat a clean skillet over medium heat. Place each burrito seam-side down and cook for 2–3 minutes per side until golden and crispy. This locks in the filling and melts the cheese perfectly.
6. Add extra nacho drizzle
Warm the remaining nacho cheese sauce and drizzle over the burritos just before serving. This makes them extra indulgent and picture-perfect.
7. Garnish and serve
Top with chopped cilantro, a dollop of sour cream, and your favorite salsa. Serve hot, straight from the skillet, for maximum crunch and flavor.
