Ingredients

  • 2 lbs small potatoes, cubed

  • 2 tbsp olive oil

  • 1 lb ground beef

  • 6 slices bacon, chopped

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tsp smoked paprika

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 cup ketchup

  • 1/4 cup mustard

  • 1/4 cup pickles, chopped (optional)

  • 2 cups shredded cheddar cheese

  • 2 green onions, sliced, for garnish


Directions

1. Prep and cook the potatoes

Heat olive oil in a large skillet over medium heat. Add the cubed potatoes and season with salt, pepper, and smoked paprika. Cook for 15–20 minutes, stirring occasionally, until the potatoes are golden and crispy on the outside and tender inside. Remove from the skillet and set aside.

2. Cook the bacon

In the same skillet, add the chopped bacon. Cook until crispy, about 5–7 minutes. Remove the bacon and place on paper towels to drain excess grease.

3. Brown the beef

Add the ground beef to the skillet with a pinch of salt and pepper. Cook over medium heat until fully browned, breaking it up with a spatula. Drain any excess grease.
