Meatloaf Mixture

Cheese Filling

12–16 small cubes of mozzarella or cheddar
(about ½ inch cubes)

1. Preheat the Oven
Set your oven to 375°F (190°C) and line a baking sheet with parchment paper or foil for easy cleanup.
2. Mix the Meatloaf Base
In a large bowl, combine the ground beef, breadcrumbs, Parmesan, onion, garlic, egg, ketchup, Worcestershire sauce, Italian seasoning, salt, and pepper. Mix gently with your hands until just combined—don’t overmix or the meat will be tough.
3. Portion the Meat Mixture
Scoop out 2-tablespoon portions of the meat mixture and gently flatten each portion in your hand to create a small patty.
4. Add the Cheese Filling
Place a cube of mozzarella or cheddar in the center of each patty. Carefully wrap the meat around the cheese and roll it into a tight ball, sealing all edges so the cheese stays inside.
5. Arrange & Optional Glaze
Place the meatloaf bites onto your prepared baking sheet. If you like a glossy, flavorful finish, brush the tops with a thin layer of ketchup or BBQ sauce.
6. Bake Until Juicy & Golden
Bake for 18–22 minutes, or until the meat is fully cooked and the bites are lightly browned. A little cheese may bubble out — that means they’re perfect!
