🍍 Hawaiian Pineapple Cake

2 cups all-purpose flour
1 ½ cups granulated sugar
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup unsalted butter, softened
3 large eggs
1 tsp vanilla extract
1 cup crushed pineapple, drained

½ cup unsalted butter, softened
4 oz cream cheese, softened
3 cups powdered sugar
1 tsp vanilla extract

Directions
1. Preheat Oven
Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.
2. Mix Dry Ingredients
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
3. Cream Butter and Sugar
In a large mixing bowl, beat butter and sugar until light and fluffy (about 2–3 minutes).
4. Add Eggs and Vanilla
Add eggs, one at a time, beating well after each addition. Mix in vanilla extract until fully combined.
5. Combine Dry Ingredients and Pineapple
Gradually add the dry ingredients to the butter mixture, mixing until just combined. Gently fold in the drained crushed pineapple.
6. Bake the Cake
Pour batter into the prepared pan and spread evenly. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely before frosting.
7. Frost and Serve
For optional frosting, beat butter and cream cheese until smooth. Gradually add powdered sugar and vanilla, mixing until creamy. Spread over cooled cake and sprinkle with toasted coconut if desired. Slice and serve.
