Ingredients

For the Cheesecake Filling

  • 1 cup chopped fresh strawberries

For the Chimichangas

  • 4–6 large flour tortillas

  • 1–2 tbsp butter, melted (for brushing)

  • Optional: powdered sugar or cinnamon sugar for topping

  • Optional: whipped cream or strawberry sauce for serving


Directions

1. Preheat Oven

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.


2. Prepare the Cheesecake Filling

In a medium bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract and continue mixing until creamy. Gently fold in the chopped strawberries.


3. Fill the Tortillas

Lay out a flour tortilla. Spoon a generous amount of the cheesecake filling in the center. Be careful not to overfill to prevent leaking during baking.


4. Fold the Chimichangas

Fold the sides of the tortilla inward, then roll it tightly from the bottom to form a secure package. Place seam-side down on the prepared baking sheet. Repeat with remaining tortillas and filling.


5. Brush with Butter

Lightly brush the top of each chimichanga with melted butter to help them turn golden and crispy in the oven.


6. Bake

Bake for 15–20 minutes, or until the chimichangas are golden brown and crispy. Turn halfway through if needed to ensure even browning.


7. Serve
