Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized chunks

  • 12 oz rotini pasta

  • 2 tbsp olive oil

  • 2 tbsp Cajun seasoning

  • 1 tsp garlic powder

  • ½ tsp onion powder

  • Salt and pepper, to taste

  • 4 cloves garlic, minced

  • 1 ½ cups shredded cheddar cheese (or cheese blend)

  • 1 cup heavy cream

  • 2 tbsp butter

  • Optional: chopped parsley for garnish

Directions

1. Cook the Pasta

Bring a large pot of salted water to a boil. Add rotini pasta and cook according to package instructions until al dente. Drain and set aside.

2. Season the Chicken

In a medium bowl, toss the chicken chunks with Cajun seasoning, garlic powder, onion powder, salt, and pepper until evenly coated.

3. Cook the Chicken

Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5–6 minutes, stirring occasionally, until browned and cooked through. Remove chicken from the skillet and set aside.

4. Sauté Garlic

In the same skillet, reduce heat to medium. Add minced garlic and cook for 30 seconds until fragrant, stirring constantly to avoid burning.

5. Make the Cheese Sauce

Add butter to the skillet and let it melt. Pour in heavy cream and bring to a gentle simmer. Gradually stir in cheddar cheese until melted and smooth. Season with additional salt, pepper, or Cajun seasoning to taste.

6. Combine Pasta and Chicken

Add the cooked rotini pasta and chicken back into the skillet. Toss gently to coat everything evenly with the creamy cheese sauce. Cook for 2–3 minutes to heat through and allow flavors to meld.

7. Serve

Remove from heat, sprinkle with chopped parsley if desired, and serve hot. Enjoy a rich, cheesy, and flavorful Cajun-inspired skillet meal!
