Ingredients

  • 1 ½ lbs boneless chicken thighs, diced

  • 1 cup long-grain white rice, rinsed

  • 2 tbsp olive oil

  • 1 medium onion, diced

  • 1 red bell pepper, diced

  • 1 cup frozen corn

  • 2 cloves garlic, minced

  • ½ cup honey

  • ½ cup BBQ sauce (your favorite brand)

  • 2 cups chicken broth

  • Salt and black pepper, to taste

  • Optional garnish: chopped parsley or green onions

Directions

1. Prepare the Chicken

Season the diced chicken thighs with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5–6 minutes, stirring occasionally, until browned but not fully cooked through. Remove chicken and set aside.

2. Sauté the Veggies

In the same skillet, add onion and red bell pepper. Cook for 3–4 minutes until softened. Add garlic and cook for an additional 30 seconds until fragrant.

3. Add Rice

Stir in the rinsed rice, coating it in the oil and vegetables. Cook for 1–2 minutes, stirring frequently, to slightly toast the rice and enhance its flavor.

4. Mix the Sauce

In a small bowl, combine honey and BBQ sauce. Pour the mixture into the skillet over the rice and vegetables, stirring to coat evenly.

5. Add Broth and Chicken

Return the chicken to the skillet. Pour in chicken broth, stir gently, and bring to a simmer. Reduce heat to low, cover the skillet, and cook for 15–18 minutes, or until rice is tender and chicken is cooked through.

6. Add Corn and Adjust Seasoning

Add frozen corn and stir to combine. Let cook for another 2–3 minutes. Taste and adjust seasoning with additional salt or pepper if needed.

7. Serve and Garnish

Remove the skillet from heat. Sprinkle with chopped parsley or green onions for a fresh finish. Serve hot straight from the skillet for a cozy, easy meal.
