Ingredients

  • 1 lb ground beef

  • ½ cup breadcrumbs

  • 1 large egg

  • 1 teaspoon garlic powder

  • ½ teaspoon onion powder

  • Salt and black pepper, to taste

  • 1 cup cheddar cheese, cut into cubes

  • 10–12 bacon slices, cut in half

  • ½ cup BBQ sauce

✨ Optional Add-Ins

  • ½ teaspoon smoked paprika or chili powder

  • Use pepper jack instead of cheddar for heat

Directions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with foil or parchment.

  2. In a bowl, mix ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper until just combined.

  3. Divide beef mixture into portions, flatten slightly, place a cheddar cube in the center, and seal into balls.

  4. Wrap each meatball with a piece of bacon and place seam-side down on the baking sheet.

  5. Brush bacon bombs generously with BBQ sauce.

  6. Bake for 25–30 minutes, turning once halfway through, until bacon is crispy and beef is cooked through.

  7. Brush with extra BBQ sauce, let rest for 5 minutes, and serve hot.
