Ingredients

For the Potatoes

  • 4 medium yellow potatoes (or russets)

  • Olive oil

  • Salt

For the Taco Filling

  • 1 pound ground beef

  • 1 packet taco seasoning (or homemade)

  • ½ cup water

Toppings

  • 1 cup shredded cheddar or Mexican-blend cheese

  • Sour cream

  • Chopped green onions

  • Optional: diced tomatoes, jalapeños, salsa


Directions

  1. Preheat oven to 400°F (200°C). Scrub potatoes clean, rub with olive oil, and sprinkle with salt.

  2. Place potatoes directly on the oven rack or a baking sheet and bake for 45–55 minutes, until fork-tender and crispy outside.

  3. While potatoes bake, brown ground beef in a skillet over medium heat until fully cooked; drain excess grease.

  4. Stir taco seasoning and water into the beef and simmer for 5 minutes until thickened.

  5. Remove baked potatoes from oven and slice open lengthwise, fluffing the insides with a fork.

  6. Spoon taco beef into each potato and top with shredded cheese.

  7. Return potatoes to the oven for 5 minutes until cheese melts, then finish with desired toppings and serve hot.
