🌽🍗 Street Corn Chicken Casserole
Creamy, Cheesy Mexican-Inspired Comfort Food
All the flavors of Mexican street corn combined with tender chicken and baked into one irresistible casserole. This dish is perfect for busy weeknights, potlucks, or anytime you want something cozy with a kick.
🛒 Ingredients

3 cups cooked chicken, shredded

2 cups corn (fresh, frozen, or canned & drained)

1 cup sour cream

½ cup mayonnaise

1 cup shredded Mexican-blend cheese (plus extra for topping)

½ cup crumbled cotija cheese (or feta)

1 small red onion, finely diced

1 jalapeño, seeded and diced (optional)

2 cloves garlic, minced

1 tsp chili powder

1 tsp smoked paprika

½ tsp cumin

Salt & black pepper, to taste

Juice of 1 lime
Topping (Optional but Recommended 😍)

½ cup crushed tortilla chips or corn chips

2 tbsp melted butter

Fresh cilantro, chopped
🍽️ Directions
1️⃣ Preheat Oven
Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
2️⃣ Mix the Filling
In a large bowl, combine chicken, corn, sour cream, mayonnaise, shredded cheese, cotija, red onion, jalapeño, garlic, chili powder, paprika, cumin, lime juice, salt, and pepper. Mix until well blended.
3️⃣ Assemble
Spread mixture evenly into the prepared baking dish. Sprinkle extra shredded cheese on top.
4️⃣ Add Topping
Mix crushed tortilla chips with melted butter and sprinkle evenly over casserole.
5️⃣ Bake
Bake uncovered for 25–30 minutes, or until hot, bubbly, and lightly golden on top.
6️⃣ Garnish & Serve
Remove from oven and garnish with fresh cilantro. Serve hot with extra lime wedges if desired.
