📝 Ingredients

  • 2 tablespoons sesame oil, divided

  • 4 large eggs, beaten

  • ½ teaspoon kosher salt

  • 1 ½ pounds boneless skinless chicken breasts, cut into 1-inch cubes

  • 1 tablespoon vegetable oil

  • 1 teaspoon paprika

  • 4 cups cooked white rice, chilled

  • 1 cup frozen peas and carrots, thawed

  • 3 green onions, sliced

  • 3 tablespoons soy sauce

  • 1–2 teaspoons sriracha or Bang Bang sauce (adjust to taste)

  • Salt & pepper, to taste


🍽️ Directions

1️⃣ Prep the Eggs

Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat.
Add beaten eggs and cook, stirring gently, until just set.
Remove eggs from the pan and set aside.


2️⃣ Cook the Chicken

Add vegetable oil to the skillet.
Season chicken with paprika, salt, and pepper.
Cook for 6–8 minutes, stirring occasionally, until golden brown and cooked through.
Remove and set aside with eggs.


3️⃣ Sauté the Veggies

In the same pan, add remaining 1 tablespoon sesame oil.
Add peas, carrots, and green onions.
Cook 2–3 minutes, until vegetables are tender but still vibrant.


4️⃣ Add the Rice

Add chilled rice to the skillet.
Break up clumps and stir-fry for 3–4 minutes until heated through.


5️⃣ Combine Chicken & Eggs

Return cooked chicken and scrambled eggs to the pan.
Toss everything together until well combined.


6️⃣ Season the Fried Rice

Add soy sauce and Bang Bang sauce or sriracha.
Stir-fry for another 1–2 minutes to coat everything evenly.
