Ingredients
Grilled Shrimp

Bowl Base

2 cups cooked rice (white, brown, or cilantro-lime rice)

2 ripe avocados, sliced
Fresh Corn Salsa

1 cup corn kernels (grilled, fresh, or thawed frozen)

½ cup cherry tomatoes, diced

¼ cup red onion, finely diced

2 tbsp fresh cilantro, chopped

Juice of ½ lime

Salt, to taste
Creamy Lime Drizzle

¼ cup sour cream or Greek yogurt

Juice of 1 lime

1 tbsp olive oil

½ tsp honey (optional)

Directions
1️⃣ Season the Shrimp
In a bowl, toss shrimp with olive oil, smoked paprika, cumin, chili powder, garlic powder, salt, and pepper until evenly coated.
2️⃣ Grill the Shrimp
Preheat grill or grill pan to medium-high heat.
Grill shrimp 2–3 minutes per side until pink, lightly charred, and opaque. Remove from heat.
3️⃣ Make the Corn Salsa
In a bowl, combine corn, tomatoes, red onion, cilantro, lime juice, and salt. Toss gently and set aside.
4️⃣ Mix the Lime Drizzle
Whisk sour cream (or yogurt), lime juice, olive oil, honey (if using), and salt until smooth and pourable.
5️⃣ Assemble the Bowls
Divide rice between bowls. Top with grilled shrimp, sliced avocado, and corn salsa. Drizzle generously with creamy lime sauce.
