Description
This Mexican Style Pizza is the perfect mash-up of taco night and pizza night. Crispy flour tortillas replace the crust, then get layered with seasoned beef, creamy refried beans, enchilada sauce, and plenty of cheese. It’s quick, fun, customizable, and always a hit with the whole family.
Ingredients

6 regular-sized flour tortillas

1 lb lean minced beef

1 small packet (1 oz) taco seasoning

½ cup water

1 large (16 oz) can refried beans

1 small (10 oz) can red enchilada sauce

1 cup shredded cheddar cheese

1 cup shredded pepper jack cheese

Directions
1️⃣ Cook the Beef
In a skillet over medium heat, brown the minced beef until fully cooked. Drain excess grease.
Add taco seasoning and water, stir well, and simmer for 3–5 minutes until thickened. Set aside.
2️⃣ Crisp the Tortillas
Preheat oven to 400°F (200°C).
Place tortillas directly on oven racks or on baking sheets. Bake 5–7 minutes, flipping once, until lightly golden and crisp.
3️⃣ Assemble the Pizzas
Spread a thin layer of refried beans on each tortilla.
Top with seasoned beef, then drizzle with enchilada sauce.
Sprinkle evenly with cheddar and pepper jack cheese.
4️⃣ Bake
Return pizzas to the oven and bake 8–10 minutes, until cheese is fully melted and bubbly.
5️⃣ Finish & Serve
Remove from oven and top with your favorite fresh toppings. Slice and serve immediately.
