Ingredients

1 tablespoon olive oil

1 pound ground beef

1 medium onion, diced

3 bell peppers (red, green, or yellow), diced

3 cloves garlic, minced

1 can (15 oz) diced tomatoes

1 can (15 oz) tomato sauce

4 cups beef broth

1 teaspoon Italian seasoning

½ teaspoon paprika

Salt and black pepper, to taste

¾ cup uncooked white rice

Optional: grated Parmesan or shredded mozzarella for topping
Directions
1️⃣ Brown the Beef
Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if needed.
2️⃣ Sauté the Veggies
Add diced onion and bell peppers to the pot. Cook for 4–5 minutes until softened. Stir in garlic and cook 30 seconds until fragrant.
3️⃣ Build the Soup
Stir in diced tomatoes, tomato sauce, beef broth, Italian seasoning, paprika, salt, and pepper. Bring to a gentle boil.
4️⃣ Simmer
Add uncooked rice. Reduce heat to low, cover, and simmer for 25–30 minutes, stirring occasionally, until rice is tender and soup thickens.
5️⃣ Serve Warm
Ladle into bowls and top with cheese if desired.
