Ingredients
For the Filling

8 oz cream cheese, softened

⅓ cup granulated sugar

½ tsp vanilla extract (optional)

½ cup chopped fresh strawberries
For the Turnovers

1 package puff pastry sheets, thawed

1 egg, beaten (for egg wash)

Optional: powdered sugar or icing for drizzle
Directions
1️⃣ Preheat & Prep
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2️⃣ Make the Cheesecake Filling
In a medium bowl, beat cream cheese, sugar, and vanilla extract until smooth. Gently fold in chopped strawberries.
3️⃣ Prepare Puff Pastry
Roll each puff pastry sheet into a rectangle. Cut into 4–6 squares depending on size.
4️⃣ Fill & Fold
Place 1–2 tablespoons of cheesecake filling in the center of each square. Fold into a triangle or rectangle, pinching edges to seal.
5️⃣ Egg Wash & Bake
Brush tops with beaten egg for a golden finish. Bake for 15–18 minutes, or until puffed and golden brown.
6️⃣ Cool & Serve
Let cool slightly. Optional: drizzle with powdered sugar or icing for extra sweetness. Serve warm or at room temperature.
