Ingredients
For the Grilled Chicken
-
2 large boneless, skinless chicken breasts
-
2 tablespoons olive oil
-
1 teaspoon Italian seasoning
-
½ teaspoon garlic powder
-
½ teaspoon paprika
-
Salt and black pepper, to taste
For the Tortellini Alfredo
-
20 oz refrigerated or frozen cheese tortellini
-
2 tablespoons butter
-
3 cloves garlic, minced
-
1½ cups heavy cream
-
¾ cup freshly grated Asiago cheese
-
¼ cup grated Parmesan cheese
-
Salt and black pepper, to taste
-
¼ teaspoon red pepper flakes (optional)
-
Fresh parsley, chopped (for garnish)
Directions
1️⃣ Grill the Chicken
Brush chicken breasts with olive oil and season evenly with Italian seasoning, garlic powder, paprika, salt, and pepper.
Grill over medium-high heat for 6–7 minutes per side, or until fully cooked and internal temperature reaches 165°F (74°C). Remove from grill, let rest for 5 minutes, then slice.
(Stovetop grill pan or skillet works great too.)
2️⃣ Cook the Tortellini
Bring a large pot of salted water to a boil. Cook tortellini according to package directions until tender. Drain and set aside.
3️⃣ Make the Asiago Alfredo Sauce
In a large skillet over medium heat, melt butter. Add garlic and sauté for 30–60 seconds until fragrant.
Pour in heavy cream and bring to a gentle simmer. Reduce heat to low and stir in Asiago and Parmesan cheeses until melted and smooth. Season with salt, pepper, and red pepper flakes if using.
4️⃣ Combine Everything
Add cooked tortellini to the Alfredo sauce and toss gently to coat. Top with sliced grilled chicken and simmer for 1–2 minutes to heat through.
5️⃣ Serve
Garnish with fresh parsley and extra Asiago cheese. Serve immediately.
