📝 Ingredients (Serves 4–6)

  • 2 lbs pork shoulder or pork belly, cut into large chunks

  • 1 tablespoon vegetable oil

  • 1 teaspoon salt

  • ½ teaspoon black pepper

Braising & Glaze Ingredients

  • 1 cup pineapple juice (or crushed pineapple with juice)

  • ¼ cup soy sauce

  • ¼ cup brown sugar or honey

  • 3 cloves garlic, minced

  • 1 tablespoon fresh ginger, grated (optional)

  • 2 tablespoons rice vinegar or apple cider vinegar

Optional Finish

  • Sliced green onions

  • Sesame seeds

👩‍🍳 Instructions

1️⃣ Sear the Pork

  • Pat pork dry and season with salt and pepper.

  • Heat vegetable oil in a heavy pot or Dutch oven over medium-high heat.

  • Sear pork chunks on all sides until deeply browned. Remove and set aside.

2️⃣ Build the Braising Liquid

  • In the same pot, add garlic and ginger (if using). Sauté briefly until fragrant.

  • Stir in pineapple juice, soy sauce, brown sugar, and vinegar, scraping up browned bits.

3️⃣ Braise

  • Return pork to the pot, ensuring pieces are mostly submerged.

  • Bring to a gentle simmer.

  • Cover and cook on low heat for 2½–3 hours, turning occasionally, until pork is very tender.

4️⃣ Glaze & Reduce

  • Remove the lid and raise heat slightly.

  • Simmer uncovered for 15–25 minutes, allowing the sauce to thicken into a sticky glaze.

  • Spoon glaze over pork until glossy and richly coated.

5️⃣ Serve

  • Garnish with green onions or sesame seeds if desired.

  • Serve hot.
