🍤 Shrimp Fried Rice – Ready in 30 Minutes!

📝 Ingredients (Serves 3–4)

2 cups cooked rice (preferably day-old or chilled for best texture)

1 lb large shrimp, peeled and deveined

2 tbsp vegetable oil or sesame oil

3 cloves garlic, minced

1 small onion, diced

1 cup frozen peas and carrots, thawed

2 eggs, lightly beaten

3 tbsp soy sauce (adjust to taste)

1 tbsp oyster sauce (optional)

1 tsp sesame oil (optional, for finishing)

2 green onions, sliced

Salt and black pepper, to taste
🍽️ Instructions
1️⃣ Prep Your Ingredients
Break up any clumps in the cooked rice. Pat shrimp dry and season lightly with salt and pepper. Chop onion and slice green onions.
2️⃣ Cook the Shrimp
Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add shrimp and cook 2–3 minutes per side until pink and opaque. Remove and set aside.
3️⃣ Scramble the Eggs
In the same skillet, add a small splash of oil if needed. Pour in the beaten eggs and scramble until just cooked. Remove and set aside with the shrimp.
4️⃣ Sauté the Vegetables
Add remaining oil to the skillet. Sauté garlic and onion for 1–2 minutes until fragrant. Add peas and carrots and cook 2–3 minutes until heated through.
5️⃣ Fry the Rice
Add the cooked rice to the skillet. Stir-fry for 3–4 minutes until warmed through. Pour in soy sauce and oyster sauce (if using), tossing to coat evenly.
6️⃣ Combine Everything
Return shrimp and scrambled eggs to the skillet. Stir gently to mix. Drizzle sesame oil over the top and toss lightly.
7️⃣ Garnish & Serve
Sprinkle sliced green onions on top. Serve hot, straight from the skillet. Optional: add sesame seeds or a drizzle of sriracha for extra flavor.
