📝 Ingredients (Serves 3–4)

2 cups cooked rice (preferably day-old or chilled for best texture)

1 lb large shrimp, peeled and deveined

2 tbsp vegetable oil or sesame oil

3 cloves garlic, minced

1 small onion, diced

1 cup frozen peas and carrots, thawed

2 eggs, lightly beaten

3 tbsp soy sauce (adjust to taste)

1 tbsp oyster sauce (optional for depth)

1 tsp sesame oil (optional, for finishing)

🍽️ How to Make Shrimp Fried Rice
1️⃣ Prep the Ingredients
If using leftover rice, break up any clumps. Chop onions and thaw peas and carrots. Pat shrimp dry and season lightly with salt and pepper.
2️⃣ Cook the Shrimp
Heat 1 tablespoon oil in a large skillet or wok over medium-high heat. Add shrimp and sauté 2–3 minutes per side until pink and opaque. Remove and set aside.
3️⃣ Scramble the Eggs
In the same skillet, add a small splash of oil if needed. Pour in beaten eggs and scramble quickly until just cooked. Remove and set aside with the shrimp.
4️⃣ Stir-Fry the Vegetables
Add remaining oil to the skillet. Sauté garlic and onion until fragrant, about 1–2 minutes. Stir in peas and carrots and cook another 2–3 minutes until heated through.
5️⃣ Add Rice & Sauce
Add rice to the skillet. Stir-fry, breaking up clumps, for 3–4 minutes until warmed through. Pour in soy sauce and oyster sauce (if using). Toss to coat evenly.
6️⃣ Combine Everything
Return shrimp and scrambled eggs to the skillet. Stir gently until everything is heated through. Drizzle sesame oil over the top, toss, and remove from heat.
7️⃣ Garnish & Serve
Sprinkle with sliced green onions. Serve hot straight from the skillet. Optional: garnish with sesame seeds for extra crunch.
