👩🍳 Instructions
1️⃣ Prepare the Shrimp
-
Pat the shrimp dry with paper towels.
-
Lightly season with salt and black pepper.
-
Heat 1 tablespoon oil in a large skillet or wok over medium-high heat.
-
Add shrimp in a single layer and cook 2–3 minutes per side, until pink and opaque.
-
Remove shrimp from the pan and set aside.
2️⃣ Scramble the Eggs
-
In the same skillet, add a small drizzle of oil if needed.
-
Pour in the beaten eggs and gently scramble until just set.
-
Remove eggs from the skillet and set aside with the shrimp.
3️⃣ Cook the Vegetables
-
Add the remaining oil to the skillet.
-
Sauté garlic, ginger (if using), and the white parts of the green onions for 30–60 seconds, until fragrant.
-
Stir in the mixed vegetables and cook for 2–3 minutes until heated through.
4️⃣ Fry the Rice
-
Add the cold rice to the skillet, breaking it apart with a spatula.
-
Spread it out evenly and let it cook undisturbed for 1–2 minutes to develop flavor.
-
Stir and continue cooking for another 2–3 minutes, allowing the rice to lightly crisp.
5️⃣ Season & Combine
-
Drizzle soy sauce, oyster sauce (if using), and sesame oil over the rice.
-
Toss well to evenly coat the rice.
-
Add the cooked shrimp, scrambled eggs, and green onion tops back to the skillet.
-
Stir everything together and cook for 1–2 minutes until heated through.
