Perfectly soft peanut butter cookies with a mini Reese’s inside! 😍

📝 Ingredients:
1 ¼ cups all-purpose flour

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

½ cup creamy peanut butter

½ cup brown sugar, packed

¼ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

24 mini peanut butter cups, unwrapped (Reese’s or any brand)

👩‍🍳 Instructions:
Preheat oven to 350°F (175°C). Lightly grease a mini muffin tin or line with paper liners.

Mix dry ingredients:
In a bowl, whisk together flour, baking soda, and salt.

Cream butter & sugars:
In a large bowl, beat butter, peanut butter, brown sugar, and granulated sugar until light and fluffy.

Add egg & vanilla:
Beat in the egg and vanilla extract until fully combined.

Combine:
Gradually add the dry ingredients into the wet mixture and mix until just combined.

Scoop & bake:
Roll dough into 1-inch balls and place in each mini muffin cup. Bake for 8–10 minutes, until just golden.

Add the surprise:
Remove from oven and immediately press a mini peanut butter cup into the center of each cookie.

Cool:
Let cookies cool in the pan for about 10 minutes, then transfer to a wire rack.

💡 Tips:
For extra chocolatey goodness, drizzle melted chocolate over the top once cooled. 🍫
