π§ Cottage Cheese Flatbread
High in protein, low in fuss, and super versatile!
π Ingredients:
1 cup (240g) cottage cheese
1 cup (120g) oat flour (or almond flour for low-carb)
1 large egg
Β½ tsp baking powder
ΒΌ tsp salt (optional)
π©βπ³ Instructions:
Blend it smooth:
In a food processor or blender, blend the cottage cheese until smooth and creamy.
Mix it up:
In a mixing bowl, combine the blended cottage cheese, oat flour (or almond flour), egg, baking powder, and salt. Mix well until a dough-like batter forms.
Divide & shape:
Divide the batter into 4β6 portions. Shape each into a flat round on a parchment-lined baking sheet or shape directly on a nonstick skillet if cooking stovetop.
Cook it up:
Option 1 β Stovetop:
Heat a nonstick skillet over medium heat.
Cook each flatbread for 2β3 minutes per side, until golden and cooked through.
Option 2 β Oven:
Preheat oven to 375Β°F (190Β°C).
Bake for 15β20 minutes or until firm and lightly golden, flipping halfway if needed.
Cool & enjoy:
Let them cool slightly before using for wraps or dipping into your favorite spreads!
